Cranberry Almond Biscotti

Preheat oven to 350F.
Lightly spoon flour into dry measuring cups and level with knife. Combine the flour and next 5 ingredients.
In a separate bowl, combine the extract and beaten eggs. Add to the flour mixture until blended.
Turn the dough onto a lightly floured surface and knead lightly to bring together.
Shape the dough into a 16 inch long roll ( 1⁄2 inch thick) and place on a baking sheet with either parchment paper or sprayed with cooking spray.
Bake at 350 for 30 minutes.
Remove from pan and allow to cool for 10 minutes.
Cut the cooked roll into diagonal slices, cut sides down back onto the baking sheet.
Reduce the temperature to 325 and bake for 10 minutes, Turn the cookies over and cook for another ten minutes.
Allow to cool. Cookies will hard once cooled.
