Thai Shrimp Salad

Salad

Directions:

In a bowl, whisk together the salad dressing ingredients. Set aside. (Reserve, ¼ cup)
Prep all the salad ingredients and add to a large bowl, except the shrimp.
Toss the salad with the peanut dressing.
Place the salad onto a large platter.
Add the cooked shrimp on top.
Drizzle the shrimp with the reserved dressing.
Garnish with chopped peanuts and cilantro if desired and serve.
